Masala Vadei



Bahan:

250 gm kacang dhal (basuh dan rendam selama 4 jam...toskan dalam penapis dan kisar kasar dan ketepikan).
2 tangkai cili kering d hiris halus
1 labu bawang bombay kecil d hiris halus
1 sudu kecil BIJI jintan manis
6 - 8 helai daun kari d hiri halus
Garam secukup rasa
minyak untuk mengoreng


Cara:

1. Masukkan kedalam mesin kisar (blender)kacang dhal yang telah di toskan tanpa d tambah air semasa mengisar. Biar hasil kisaran kasar sedikit.

2. Masukkan daun kari, bawang, biji jintan manis, hirisan cili kering dan garam dalam bekas kisaran tadi dan gaul rata.

3. Ambil hasil pes campuran dan jadikan bulat dan leperkan di atas tapak tangan (letak sedikit minyak d atas tapak tangan supaya tidak melekat).

4. Tentukan minyak cukup panas. Masukkan vadei tadi kedalam minyak dan goreng 4 atau 5 dan tentukan ia tidak bertindeh di antara satu sama lain. Suhu minyak perlu di jaga sentiasa jika tidak vadei akan bertaburan dalam kuali atau hangus sebelum masak. Masa mengoreng selalunya 5 - 6 minit..vadei cukup masak dan garing.

Bingka Crackers

BAHAN2:
140g Biskut Cracker
- kisar halus
85g Tepung Gandum
210g Gula (Ma kurangkan ke 150g)
3 biji Telur
700ml Santan @ Susu Cair (Ma guna 200ml Santan Kotak, 250ml Susu, 250ml Air)
1 sb Butter
1 sk Pandan Paste
Secubit Garam
Sedikit Bijan

CARA2:
1. Blend kesemua bahan kecuali bijan sehingga sebati.
2. Tuang ke dalam loyang yg di sapu minyak dan taburkan bijan.
3. Bakar 180C selama 1 jam sehingga keperangan.
4. Sejukkan sebelum di potong.

Cinnamon Sugar Apple Cake



Ingredients
  • 1 1/2 cups brown sugar
  • 1/3 cup oil
  • 1 egg
  • 1 cup buttermilk (you can sub milk+vinegar, or plain yogurt+milk)
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 2 1/2 cups flour
  • 1 1/2 cups chopped apples
  • 1/2 cup sugar
  • 1 tsp. cinnamon
  • 1 tbs. butter
Instructions
  1. Preheat oven to 325.
  2. Mix ingredients in order given (except the last 3 ingredients).
  3. Pour batter into a 9×13 greased pan.
  4. Combine last 3 ingredients to make a topping and sprinkle it evenly over the batter.
  5. Bake for 45 minutes. It’s delicious when served warm!

Som Tam


Bahan-bahan :

1 biji betik muda, hiris memanjang, ketepikan
1 biji mangga muda, hiris memanjang, ketepikan
2 sudu makan kacang goreng – tumbuk kasar.
2-3 sudu makan sos ikan
1 sudu makan air limau nipis
1 sudu teh gula
1 biji buah tomato, belah 4

Bahan tumbuk :


1 ulas bawang putih
2 tangkai lada merah/ lada api – tambah lagi jika mahu pedas
1 sudu teh udang kering, rendam air panas sampai kembang

Cara penyediaan :

Tumbuk bawang putih, lada dan udang kering. Masukkan ke dalam mangkuk.
Masukkan kacang goreng, betik dsn mangga muda. Gaul hingga sekata.
Tuangkan sos ikan, air limau nipis, gula dan tomato
Kacau hingga mesra dan sajikan segera.

Grilled Squid with Green sauce




Ingredients: (8-10 servings)

For Squid

1 kg squid- cut into long strips

1/2 cup soy sauce

2 tbsp minced ginger

Bamboo skewers soaked in water

For Sauce

3-4 fresh green chili- pound into rough paste or finely minced

6 cloves garlic- finely minced

1/2 cup sugar

1/2 cup vinegar

1/4 cup water

1 lime- juiced

2 tsp salt

2 tbsp fish sauce

A handful coriander- finely chopped

Preparation:

  1. Skewer squid in bamboo skewers leaving some space for handling. Marinate the squid in soy sauce and ginger for half hour.
  2. While the squid is marinating, make the sauce. Bring sugar, vinegar, water, and salt to boil. When all sugar is dissolve, remove from the heat. Let the savory syrup cool down, and then add green chili, garlic, lime juice, fish sauce and coriander. Stir well and keep aside.
  3. Back to the squid. Set the charcoal grill on medium-high heat. Grill the squids about 2 minutes each side or until the squid slightly charred on the outside and cooked through.
  4. Serve hot with green sauce.

Stew Daging


Bahan-bahan:

500gm daging lembu di bersihkan dan potong kiub
2 biji bawang besar ~ potong dadu
5 ulas bawang putih
2 ulas bawang merah
1 batang lobak merah ~ potong dlm 1 inci
2 biji kentang ~ belah 4
2 helai daun bay
2 sudu tepung gandum
1 sudu kecil serbuk lada hitam
Garam dan gula
Sedikit daun bawang, sup dan bawang goreng ~ utk hiasan
Minyak untuk menumis
Air secukupnya.

Cara penyediaan:

1. Panaskan minyak didalam periuk tekanan(pressure cooker). Gaulkan daging bersama serbuk lada hitam dan gorengkan daging lebih kurang 10-15 minit atau daging keperangan. Kemudian angkat daging.
2. Tumiskan bawang putih, merah dan daun bay. Kemudian masukkan tepung gandum, kacau rata.
3. Masukkan semula daging dan air secukupnya, kacau rata. Tutup periuk dan masak selama 20-30 minit dengan menggunakan periuk tekanan.
4. Kemudian tambahkan kentang dan lobak. Tutup dan masak lagi selama 20minit atau sehingga sayuran empuk/lembut.
5. Perasakan dengan garam secukup rasa dan sedikit gula. Hidangkan dengan ditaburkan dgn bawang goreng, daun sup dan daun bawang.

Stew Ayam





Bahan:
500 gm ayam [buangkan kulit dan potong kecil]
2 tangkai daun sup ]
2 tangkai daun bawang ] potong pendek
1 batang carrot [potong kecil]
1 biji kentang [potong kecil]
minyak

Bancuhkan

1 sudu kecil kicap cair
1 s/k tepung jagung
1/2 cawan air
1 s/k lada hitam
1 s/k minyak bijan
garam secukup rasa...

Bahan Tumis [hiriskan]

5 ulas bawang merah/kecil
2 ulas bawang putih
1 inci halia
2 biji cili merah
Cara Memasak
1. Ayam dibuangkan kulit, potong kecil dan bersihkan.
2. Panaskan minyak dan tumiskan bahan tumis sehingga layu.
3. Masukkan ayam dan kacau rata. Biarkan sehingga lembut.
4. Masukkan sayuran kecuali daun bawang & daun sup.
5. Bila dah layu masukkan bancuhan tepung jagung dan kacau rata.
6. Tutup api dan taburkan daun sup dan daun bawang

Oatmeal/Cornflake Chocolate Hedgehogs






Ingredients:
100 g margarine
100 g powdered sugar (about 9 tablespoons)
3-4 tablespoons honey
4 tablespoons of cocoa
150 g of oatmeal (about 1.5 cups)
50g cornflake (crush)


Preparation:
Put margarine,caster sugar,honey and cocoa powder in the saucepan. Heat up and stir until everything is mixed together. Turn the heat off, add oats and mix everything until oats and cornflake are covered with the chocolate mixture. Using two teaspoon shape small cookies and drop on waxed paper. Wait few hours(you can pun in fridge for a while) until hardened or start eating right away if you can not wait !!

Zucchini Slice

INGREDIENTS


5 eggs

150g (1 cup) self-raising flour, sifted
375g zucchini, grated
1 large onion, finely chopped
200g chicken roll, chopped
1 cup grated cheddar cheese
60ml (1/4 cup) vegetable oil

METHOD


1. Preheat oven to 170C. Grease and line a 30X20cm lamington pan.

2. Beat the egg in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, chicken roll, cheese and oil and stir to combined. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.

Eggless Dates Cake


Ingredients:
  • All purpose flour – 2 cups
  • Sugar – 1 cup
  • Baking soda – 2 tsp
  • Salt – 1/4 tsp
  • Cinnamon powder – 1-1/2 tsp
  • Dates – 1 cup
  • Honey – 1 tbsp (optional)
  • Water – 2 cups
  • Vegetable oil – 1/2 cup

Method:

Preheat the oven to 180 Degrees C. Prepare a baking tray by greasing and flouring it.

Measure all purpose flour and to that add baking soda. Sieve together twice and keep it aside.

In a pan measure the sugar. To this add salt and mix well.

Next goes in the cinnamon powder and finely chopped pitted dates.

Next goes in the vegetable and water. Now mix everything together. Place the pan on the stove and bring it to a boil. when you start to see the bubbles around the sides, simmer the flame completely and let it cook for 15. Your home should smell heavenly by now.

Take off the stove and cool it completely. This will take at least 1-1/2 to 2 hours for this given quantity.

Now add honey, sieved flour little by little while mixing. You can use an electric hand mixer to get the job done easily but I chose to do it by hand and this will also take some time comparatively. Make sure that there are no lumps.

Transfer the batter to the prepared tray and bake for 35-40 min or till a skewer inserted comes out clean.


Dates & Cornflakes Cookies

70g butter softened
1/2 C self rising flour
3 tablespoons brown sugar
1/2 C chopped dates
3/4 C crushed cornflakes


METHOD

Cream butter and brown sugar, add in the rest of the ingredients.

Pinch dough and shape into small ball, lightly flatten them.

Place the balls onto baking sheet.

Bake until golden brown for 12-15 minutes @ 160C.

Transfer onto rack to cool.

Store in an airtight container when completely cool.

Chicken Mendey Rice

    • HOMEMADE MENDEY MIXED SPICES:
      2 tablespoon cardoman pods
      2 tablespoon cloves
      2 teaspoon black pepper
      1 whole nutmeg
      1 table spoon deride ginger
      4 bay leaves

      Ingredients:


      1 chicken cut into 4pcs

      2 tablespoon mendey mixed spices

      3 cups basmati rice

      1 tablespoon butter
      1 large onion-finely chopped
      1 small tomato - finely chopped removes seeds
      4 whole cardoman pods
      6 whole cloves
      6 black pepper corns
      4 1/2 cups water or chicken stock

      Method:


      Rub spices and salt all over the chicken, place it in a pan, cook chicken until tender and brown about 40 minutes


      Saute onion and butter until tender and brown, add water spices, salt,rice stir boil then add chopped tomato, simmer cover cook on a very low heat about 20 minutes.


      Serve it with green salad or yogurt with cucumber and mint, dill and tomato chutney.

Pau Ayam & Donut

Bahan:
500 gm Tepong Gandum
60g Gula Halus
1/2 sudu kecil garam
70ml Minyak sayur/makam (Ma guna minyak Sunflower)
1 peket Instant yeast
230ml air paip

Cara:
1. Mula2 satukan yeast kedalam 230ml air..kacau sikit dan ketepikan.

2. Masukkan tepong, gula dan garam kedalam mangkuk besar dan gaul rata.

3. Kemudian masukkan minyak sedikit2 dan gaul hingga rata.

4 Akhir sekali masukkan air yeast sedikit2 dan uli hingga lembut dan tak melekit. Jika masih melekit, tambah sedikit tepong dan sekiranya kering masukkan sedikit minyak lagi.

5. Doh yang sudah siap d uli, tidak perlu d perap. Boleh segera d buat Pau/Donut.

6. Bulat2kan doh dan isikan inti kesukaan masing2.

7. Goreng Pau 1/2 masak dan simpan dalam freeze. Jika ingin membuat Pau goreng instant. Atau kukus Pau dan simpan dalam freezer untuk Pau kukus instant.

8. Inti Pau pilihan seperti Sambal Tumis, Kacang Merah, Kaya,Kelapa Manis, Choc dan lain2.

9. Adunan akan lebih lembut jika menggunakan food mixer. Jika tiada food mixer..jom menguli manual sahaja..
