Cornflake Cookies



 
Butter- 100 gms
Caster sugar- 75 gms
Egg- 1 large (slightly beaten)
Vanilla extract- 1/2 tsp
Plain flour- 150 gms
Corn flour- 15 gms
Baking powder- 1/4 tsp (optional)
Plain cornflakes- 40 gms (coarsely crushed)
 
In a bowl mix together the flour, corn flour and baking powder. Keep aside.
Cream together the butter and sugar in a mixing bowl till light and fluffy. You can either use an electric beater or just a hand whisk would do.
Add the lightly beaten egg followed by vanilla extract and mix together for about a minute or so, till they all come together.
Tip in the flour mix and fold with a spatula till no traces of flour is seen. 
Pre-heat the oven to 175C and line a baking tray with baking paper.
Have the crushed cornflakes in a bowl.
Lightly wet your palms and make small balls out of the dough. About 1 tsp in size (approx.)
Roll the balls in cornflakes and place on the tray, about an inch apart.
Bake for 25 minutes or till the cookies become a nice golden brown in colour.
Take the tray out of the oven and leave to set for about 5 minutes after which you can transfer the cookies on to a cooling rack and wait for them to completely cool.
Store them in an air tight container or eat them right away with a cuppa tea :)
Notes: You can replace the caster sugar with normal granulated sugar.
I used Kellogg's cornflakes.
Refrigerate the dough for about half an hour, if you find they are too sticky to make into balls.

Crab with salted Eggs



Ingredients

1kg fresh crabs
1 cup tapioca flour
Oil for deep-frying
3 salted egg yolks (I used salted duck eggs)
5 bird's eye chillies, chopped
2 stalks curry leaves
3 tbsp butter
½ tsp salt or to taste
½ tsp pepper
1½-2 tsp sugar
3 tbsp evaporated milk

Method


  1. Clean the crabs. Remove the pincers and trim the legs. Cut into 4 pieces.
  2. Boil salted eggs for 7-9 minutes. Remove the yolks and use a fork to mash the egg yolks finely.
  3. Make sure the crabs are dry, then toss them in tapioca flour. Deep-fry in hot oil till golden in colour and cooked. Remove and leave aside.
  4. Melt butter in a wok, sauté curry leaves and bird's eye chillies until aromatic. Add salted egg yolks, keep stirring until egg yolks are incorporated into the butter sauce.
  5. Add pepper, salt, sugar and evaporated milk then stir in pre-fried crabs. Stir-fry briskly to mix. Dish out and serve immediately.

Kek Kukus Hitam


 
Bahan:
8 oz Mentega
5 biji Telor
1 cawan Gula Halus
1 1/2 cawan Tepong Gandum*
1 sudu teh Baking Powder*
1 sudu teh Bicarbonate of Soda*  (*di ayak bersama)
1 cawan susu pekat manis
sedikit esen vanilla
1/3 botol Gravy Browning



Cara:
1.Pukul mentega bersama gula sampai kembang.
2.Masukkan Telor satu persatu dan gaul hingga sebati.
3.Masukkan Tepong Gandum yang telah d ayak bersama Baking Powder + Bicarbonate of Soda.
4.Akhir sekali masukkan Susu pekat manis,Gravy Browning & Essen vanilla.
5.Kukus selama 1 1/2jam.
