Carrot cake

Ingredients:

200gm Plain flour
1/2 tsp ground cinnamon
1/2 tsp grated nutmeg
1 tsp baking powder
1 tsp bicarbonate of soda
150 gm dark sugar
200ml vegetable oil
3 medium eggs
225gm carrots
50 gm chopped walnut

Method:
Preheat over 200 c.
Shift the flour, baking powder and bicarbonate of soda together
Stir in the dark sugar and mix together
Lightly whisk the oil & eggs together then gradually stir into the flour and sugar mixture. stir well
Add carrot and walnut mix throughly and then pour into the prepared cake pan.
Bake for 1 1/2 hours or until cook.
