Cornflake Cookies



 
Butter- 100 gms
Caster sugar- 75 gms
Egg- 1 large (slightly beaten)
Vanilla extract- 1/2 tsp
Plain flour- 150 gms
Corn flour- 15 gms
Baking powder- 1/4 tsp (optional)
Plain cornflakes- 40 gms (coarsely crushed)
 
In a bowl mix together the flour, corn flour and baking powder. Keep aside.
Cream together the butter and sugar in a mixing bowl till light and fluffy. You can either use an electric beater or just a hand whisk would do.
Add the lightly beaten egg followed by vanilla extract and mix together for about a minute or so, till they all come together.
Tip in the flour mix and fold with a spatula till no traces of flour is seen. 
Pre-heat the oven to 175C and line a baking tray with baking paper.
Have the crushed cornflakes in a bowl.
Lightly wet your palms and make small balls out of the dough. About 1 tsp in size (approx.)
Roll the balls in cornflakes and place on the tray, about an inch apart.
Bake for 25 minutes or till the cookies become a nice golden brown in colour.
Take the tray out of the oven and leave to set for about 5 minutes after which you can transfer the cookies on to a cooling rack and wait for them to completely cool.
Store them in an air tight container or eat them right away with a cuppa tea :)
Notes: You can replace the caster sugar with normal granulated sugar.
I used Kellogg's cornflakes.
Refrigerate the dough for about half an hour, if you find they are too sticky to make into balls.

Crab with salted Eggs



Ingredients

1kg fresh crabs
1 cup tapioca flour
Oil for deep-frying
3 salted egg yolks (I used salted duck eggs)
5 bird's eye chillies, chopped
2 stalks curry leaves
3 tbsp butter
½ tsp salt or to taste
½ tsp pepper
1½-2 tsp sugar
3 tbsp evaporated milk

Method


  1. Clean the crabs. Remove the pincers and trim the legs. Cut into 4 pieces.
  2. Boil salted eggs for 7-9 minutes. Remove the yolks and use a fork to mash the egg yolks finely.
  3. Make sure the crabs are dry, then toss them in tapioca flour. Deep-fry in hot oil till golden in colour and cooked. Remove and leave aside.
  4. Melt butter in a wok, sauté curry leaves and bird's eye chillies until aromatic. Add salted egg yolks, keep stirring until egg yolks are incorporated into the butter sauce.
  5. Add pepper, salt, sugar and evaporated milk then stir in pre-fried crabs. Stir-fry briskly to mix. Dish out and serve immediately.

Kek Kukus Hitam


 
Bahan:
8 oz Mentega
5 biji Telor
1 cawan Gula Halus
1 1/2 cawan Tepong Gandum*
1 sudu teh Baking Powder*
1 sudu teh Bicarbonate of Soda*  (*di ayak bersama)
1 cawan susu pekat manis
sedikit esen vanilla
1/3 botol Gravy Browning



Cara:
1.Pukul mentega bersama gula sampai kembang.
2.Masukkan Telor satu persatu dan gaul hingga sebati.
3.Masukkan Tepong Gandum yang telah d ayak bersama Baking Powder + Bicarbonate of Soda.
4.Akhir sekali masukkan Susu pekat manis,Gravy Browning & Essen vanilla.
5.Kukus selama 1 1/2jam.

Kuih Makmur



For the dough :

500 g flour
80 g castor sugar
Ghee ~ enough to make soft dough

For the filling :

300 g groundnuts
70g castor sugar
** I think half recipe of the filling is enough for 1 recipe of the dough

Icing sugar ~ for coating

Method :

1. Combine all the ingredients for the dough to form a soft dough.
2. Place the groundnuts on a tray and bake in the oven.

3. Remove the skin and grind the nuts. Mix well with sugar. Leave aside.
4. Take a bit of dough roll into a ball and then flatten it.
5. Place the filling and cover. Shape it oval, like the shape of a leaf.
6. 'Clip' on top of the dough just to give it a prettier look!

Ayam masak Serai

Bahan
1 ekor ayam dipotong kecil2
6 batang serai dititik sehingga pecah bawahnya ( sekiranya tidak pecah bawahnya, rasa serai itu kurang dan serai lambat kering)
2 keping asam gelugor
Garam dan kunyit

Bahan untuk di kisar:
6 biji bawang merah
1 labu bawang besar
4 ulas bawang putih
20 tangkai lada kering dibuang biji dan direbus

Caranya:
Ayam di lumur dengan garam dan kunyit dan digoreng separuh masak
Angkat ayam dan toskan minyaknya
Tumiskan bahan2 yang telah dimesin sehingga agak garing
Masukkan ayam yang telah digoreng separuh masak tadi bersama asam gelugor dan goreng lagi sehingga serai kering. Sekiranya serai belum cukup kering dan tidak naik minyak, ini menunjukkan bahawa ayam serai masih belum siap untuk di makan.
Angkatkan semuanya dan boleh dimakan dengan nasi putih panas2 atau dengan nasi impit.

Nasi Tomato

BAHAN2NYA:

4 cawan beras Basmathi
3 cawan air
1 tin soup tomato Kimballs (425gms)
1 sudu besar  pes tomato puree
½ cawan susu cair (evap milk)
2 sudu besar minyak sapi
1 sudu besar minyak jagung
100 gms biji gajus  (optional)
2 labu bawang besar
3 ulas bawang putih
2 inci halia (diketuk)
1 kayu manis*
2 bunga lawang*
3 biji pelaga (cardamons)*
2 helai daun pandan
sedikit garam
daun ketumbar 


 CARA:
Beras dicuci dan direndam selama lebih kurang ½ jam.
Panaskan minyak sapi serta minyak jagung dalam periuk. Kemudian tumis bahan bertanda * hingga wangi. Pastu masukkan bawang merah dan bawang putih yang telah dimayang nipis bersama halia yang telah diketuk serta daun pandan. Apabila bawang sudah nampak keperang2an, masukkan air (3 cawan), 1 tin soup tomato dan  1 sudu pes tomato puree. Biarkan mendidih.
Apabila mendidih, masukkan susu cair, sedikit garam, kacau dan pelankan api.
Toskan beras dan masukkan ke dalam periuk nasi (rice cooker). Masukkan gajus dan tuangkan bahan2 yang telah dimasak tadi. Kacau perlahan2 hingga sebati dan masak.
Apabila sudah masak, kaiskan pelahan2 guna garfu dan tutup semula tudungnya. Masa menghidang, taburkan bawang goreng dan daun ketumbar.

Moist Banana cupcake

Ingredients
125g butter
1 cup (200g) white sugar
2 eggs
3 ripe bananas
1 tsp vanilla essence
2 tbsp milk
1/2 tsp bicarbonate soda
1 1/2 cups (185g) self-raising flour
Method :
1. Preheat oven to 190 C. Cream butter and sugar in a bowl until it turns pale and creamy. Gradually add beaten eggs one at a time. Mash banana in a bowl and add in vanilla essence. Mix bicarbonate soda in a cup with the milk.
2. Add the mashed banana mixture into the creamed butter mixture until combined. Alternately add flour and milk mixture mix until just combined.
3. Pour mixture into a greased and lined loaf tin and bake for 45 mins or skewer come out clean.
Cool on cake rack.
