Ma' Moul Abiad


Ingredients
62 gm powdered sugar
125 gm ghee at room temperature
250 gm all purpose flour
unsalted pistachios - remove shells

Instructions
Preheat oven to 300 degrees.
Mix powdered sugar and ghee in a large bowl using your hands. It will look like pancake batter (pale yellow & slightly runny).
Add the flour and continue mixing by hand until the dough no longer sticks to your fingers. Cover the bowl with plastic and refrigerate briefly (about 10 minutes). Remove from the fridge and knead the dough gently with your fingers.
Take a small piece of the dough and form a ball about the size of a ping pong ball. Flatten the ball until it is about 1/4 inch thick and place on an ungreased cookie sheet, and then press one pistachio on the center of the cookie. Do this for all remaining dough - should make about 12 cookies.

Bake at 300 degrees for 8-10 minutes until bottom of cookie becomes lightly golden.
Remove pan from oven and allow cookies to cool on the pan for 10-15 more minutes so they can harden before you try to move them.

Egg Wantan


Ingredients

12 Quail Eggs
12 Wonton Skins
Wood Skewers
Oil for deep fry


Preparation


1. Boil the quail eggs in water for 8 minutes.
2. Remove the shells and dry them.
3. Heat oil in a deep fat fryer to 170 degrees celsius.
4. Wrap each egg up in wonton skins and skewer onto wooden sticks.
5. Deep fry in the hot oil for 2 minutes.


Serve with:

Lettuce
Cucumber
Tomato
Sweet Chicken Sauce

Yong Tau Foo

Bahan2 untuk sos:


Kicap Masin
Kicap Manis
Sos Cili
Sos Tomato
Otak Udang
kacang tanah (goreng & tumbuk)
Bijan

Cara:
Masukkan kesemua bahan2 kedalam periok dan masak atas api sampai pekat.

Bahan lain ikut citarasa:

Kangkong
Fish Ball
Fish Cake
Crab meat
Tauhu

Rebuskan kesemua di dalam air yang mendidih yang d campur dengan kuib ikan bilis. Toskan dan boleh lah d makan dengan sos d atas.

Ikan masak semur pedas

Bahan:
300 g ikan tengiri
1 cteh serbuk kunyit (d cmpr satu cteh air dan garam secukup rasa d gaul jadikan rempah basah)
minyak untuk mengoreng

Bahan kisar:
3-4 tangkai lada merah
1 biji bawang besar (sederhana)
2 ulas bawang putih
1/4 cawan air (sekira mengunakan pengisar)
2 cbsr kicap pekat
1/2 - 3/4 cawan air
1 cteh gula
2 cbsr minyak
air limau kasturi

Cara:
Lumurkan kunyit pada kepingan ikan dan goreng hingga garing. Toskan dan ketepikan.

Tinggalkan minyak dalam kuali anggaran 2 cbsr. Panaskan minyak dan tumis bahan kisar hingga bangkit baunya. Masukkan semula ikan goreng kedalam kuali. Selaputkan dengan rempah. Masukkan kicap,air,gula dan akhir sekali air limau. Tutup periuknya dan renih anggaran 5 minit.

Acar Timun

Bahan:
Timun - di hiris
Lobak - di hiris
Halia - di hiris
Bawang Merch Kecil
Bawang putih
Cuka
Gula
Garam
Biji bijan
minyak masak
serbuk kari ikan adabi
sedikit air

Cara:
Timun, lobak, halia, Bawang Merah kecil, Bawang putih di jemur di bawah matahari sehingga setengah kering.

Panaskan minyak, goreng bawang merah kecil, bawang putih dan halia sebentar kemudian masukkan sebuk kari ikan gaul dan tambah sedikit air. Biarkan mendidih sebentar lalu masukkan bahan timun dan lobak. Gaul rata. Akhir sekali tambah dgn bahan perisa... cuka, gula, garam dan kacau rata. Tutup api dah biarkan sejuk sebentar.
Gaullah bersama sedikit biji bijan yang telah di goreng tanpa minyak..

Ayam Percik


Resipi:
A
15 biji cili kering, direndam
10 ulas bawang merah
3 ulas bawang putih
3 cm halia
3 batang serai
2 cm kunyit hidup

B
250 ml santan pekat
2 camca besar gula secukup rasa
1 camca besar tepung beras
2 Kiub Pati Ayam

1 kg ayam, dipotong ke 4 kepingan dan dihiris

Campur ramuan A dan kisar hingga lumat. Dalam periuk, campur ramuan A dan B. Masak di atas api yang sederhana hingga kuah hampir pekat.Ketepikan dari api.

Sapu kepingan ayam dengan kuah rempah dan panggang atas dawai memanggang hingga kekuningan.Kemudian terbalikkan di sebelahnya, sapu lagi dengan kuah dan panggang hingga masak.Ulang proses ini dengan kepingan seterusnya.


Peach Cheese Cake


Ingredients:
2 cup oats
2/3 cup brown sugar
1/2 cup butter, melted
chopped nuts (optional)

11 oz. cream cheese, softened
3/4 cup condense milk
1 cup sugar
3 eggs
1 tsp. vanilla
1 cup orange juice
2 tsp. cornstarch
2 cup drained peach slices (canned)
Nutmeg

Method:
Combine oats, brown sugar and 1/2 cup chopped nuts and butter.
Mix well and press into the bottom and about 1 1/2 inches up the side of an ungreased 9 inch springform pan.
Bake at 350 degrees for 10 minutes. Cool.

For filling, combine cream cheese and condense milk and beat at high speed of mixer for 7 minutes or until very smooth.
Gradually add 3/4 cup sugar beating constantly.
Add eggs, one at a time, beating well after each addition.
Mix in vanilla.
Pour into the crust and bake at 350 degrees for 35 to 40 minutes or until firm.

To prepare glaze, combine orange juice, cornstarch, and the remaining 1/4 cup sugar in a saucepan. Bring to a boil and cook until the mixture is thick and clear.
Cool to room temperature.
Arrange sliced peaches on the cheesecake. Pour the cooked glaze over the peaches. Sprinkle lightly with nutmeg.
Chill several hours before serving

Puding roti berJELLY

1 paket agar2 serbuk tanpa warna/plain (dalam 15gm)
2 keping roti gardenia
4 cawan air
1/2 cawan gula
1/2 cwn susu pekat
1 cawan susu cair
2 sudu besar mentega
1 sudu kecil esen vanila
1 pkt jelly rasa buah-buahan


Cara-Cara:
Masak agar2 bersama gula dan air hingga gula benar2 hancur.
Sementara itu, rendam roti dalam susu cair dan carik-carikkan.Satukan susu cair,roti dan susu pekat manis.Blend halus
Setelah agar2 dan gula hancur, masukkan bahan blend ke dalam periuk, juga masukkan esen vanilla dan mentega.Kacau hingga mendidih dan pekat sedikit.Tutup api.
Ambil 1 cawan adunan dan warnakan merah (sebagai lapisan bawah)Biar keras sedikit.
Adunan selebihnya di curahkan diatas lapisan merah tadi. Taburkan jelly rasa buah2an kedalam adunan tadi. Biar sejuk.Simpan ke dalam peti sejuk.
